Homemade Cookies

When you place the cookie dough on the cookie sheet, press the dough down a bit to flatten it so that it doesn't spread too much while baking and so that the stick can be inserted properly. Before you bake the cookies, you must insert the chopstick or wooden skewer into one side of each cookie. Push it in almost the length of the cookie without going out the other end. This is an important step, as if your cookie is too big and your stick is not sturdy enough, it simply won't hold it and the cookie may fall apart when you pick it up.

Place sugar and butter blend in a large bowl. Mix together with flour, oatmeal, baking powder, and baking soda. Add chocolate chips, and nuts. Mixture will be quite heavy and this is quite a large batch, so you will probably want to use your clean hands to mix everything together.

Recipes for cookies in a variety of styles and flavors increased in the early 1900s and continues today. Cookies are the most common treat baked in home kitchens and it's estimated that more than half of all home baked cookies are chocolate chip.

Do Not Over mix. With most cookies, mixing the dough too long can result in cookies that are dry and tough. Once the flour is introduced to the dough, only mix until the flour is incorporated. Once flour is moistened and mixed or kneaded, the gluten in the flour develops a strong network which gives structure to the dough. If you prefer soft cookies, be sure to keep the mixing to a minimum.

Measure accurately. Baking requires precise measuring with special measuring tools including measuring spoons in 1/4 teaspoon, 1/2 teaspoon, 1 teaspoon, and 1 tablespoon increments, dry measuring cups and liquid measuring cups with spouts. Be sure to measure everything carefully, especially flour, which needs to be fluffed up before being spooned into the cup and leveled off.

Go back in time and make some cookies using this recipe from grandma's recipe box. And get the children involved in the kitchen with you.

Cream shortening and confectioners' sugar; blend in 1 1/2 cups flour. Press mixture into the bottom of ungreased 13x9x2-inch pan. Bake 12 to 15 minutes. Mix together the remaining ingredients, except icing, and spread over the hot baked layer. Bake 20 minutes more. While warm, spread with the orange-lemon icing.
